Turkey Lasagne with Salad
Feeds: 4 Prep Time: 5mins Cooking Time: 40 mins
500g turkey mince
1 tbsp olive oil
1 onion, chopped
1 garlic clove, crushed
100g mushrooms, chopped
500ml tomato passata
1 tsp mixed herbs
Lasagne sheets
50g butter/marg
50g plain flour
500ml milk
125g cheddar cheese, grated
Salad: lettuce, spring onions, ¼ cucumber, 3 tomatoes, salad dressing.
Method:
1. Preheat the oven to 200C or Gas 6. Fry the onion and garlic for a couple of mins until soft, then add the mince until browned. Stir in the mushrooms, tomato passata, mixed herbs and seasoning. Cook for 25 mins.
2. Heat the butter/marg, flour, and milk in a pan, stirring all the time until it thickens. Mix in 2/3 of the grated cheese.
3. Layer the mince, cheese sauce and lasagne sheets in an ovenproof dish, ending with a layer of cheese sauce. Sprinkle with the remaining grated cheese. Bake for 30 mins
4. While the lasagne is cooking, prepare a simple salad to accompany.
